Ingredients

1 cup ranch dressing
1/2 cup crumbled blue cheese
1 medium red bell pepper
1 medium green bell pepper
1 large sweet onion
1 (12-oz) bag turkey meatballs
Cooking spray
2 teaspoons garlic powder
2 teaspoons cayenne pepper
6 (6-inch) bamboo skewers

Steps

  1. Preheat oven to 400°F. Combine dressing with blue cheese; chill until ready to use.
  2. Chop bell peppers and onions into 1-inch squares. Place meatballs in a medium mixing bowl; coat with spray. Add garlic and cayenne; toss to coat.
  3. Thread bell peppers, meatballs, and onions onto skewers, alternating items. Arrange skewers on baking sheets.
  4. Bake 15–18 minutes and until meatballs are 165°F. Serve with chilled dressing.
