Feta-Stuffed Lamb Sliders

2 oz chunk feta cheese
1 lb ground lamb
2 teaspoons dried oregano
2 teaspoons garlic powder
1 tablespoon extra-virgin olive oil
1/2 seedless cucumber, thinly sliced
1/2 cup cucumber-yogurt dip
24 mini pitas
1/2 cup baby arugula
12 (4-inch) wooden skewers (optional)


  1. Preheat grill (or grill pan) on medium heat. Cut cheese into 12 (1/2-inch) cubes. Combine in bowl: lamb, oregano, and garlic until blended; shape into 12 meatballs. Stuff 1 cheese cube in center of each lamb slider, rolling lamb mixture completely around cheese (wash hands).
  2. Coat stuffed sliders with oil; grill 10–12 minutes, turning occasionally, until browned and 160°F.
  3. Cut cucumber into 12 slices. Spread even amount dip on one side of each pita. Top 12 pitas with one cucumber slice, one stuffed slider, arugula, and another pita (skewer to hold slider together, if desired). Serve.
Note: Stuffed sliders can be baked in a preheated 425°F oven for 18–20 minutes and until 160°F.
