1 (19-oz) bag frozen sweet potatoes fries
Cooking spray
3 oz reduced-sodium sliced ham, chopped
1 oz reduced-fat cheddar cheese, shredded
1 1/2 cups egg substitute (or egg whites), divided
3/4 cup fresh diced tri-pepper mix, divided
Steps
Preheat oven to 425°F. Arrange fries on baking sheet; bake 10 minutes. Chop ham; shred cheese.
Coat 12-cup muffin pan with spray. Place 6 fries (about 1/4 cup) in each muffin cup, pressing firmly to cover bottom and to make an indentation in center. Pour 2 tablespoons egg into each cup, then sprinkle evenly with ham and pepper mix.
Bake 12–15 minutes or until egg is set. Top each muffin evenly with cheese, then let stand until cheese has melted and eggs are cool. Serve.
