1 large red cabbage, shredded
1 clove garlic, finely chopped
1/2 cup fresh cilantro, coarsely chopped
1 jalapeño pepper, finely chopped
1 cup apple cider vinegar
2 tablespoons orange juice
3 tablespoons honey
1 tablespoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon pepper
1 (10-oz) package matchstick carrots


  1. Shred cabbage; chop garlic, cilantro, and jalapeño (removing seeds and membrane, if desired). Combine in a large bowl: garlic, vinegar, juice, honey, oregano, salt, and pepper until blended.
  2. Add cabbage, cilantro, jalapeño, and carrots to bowl and toss to coat. Chill 3 hours or until ready to serve.
