Creamy Calabaza Sopa

1 (32-oz) container prediced calabaza squash
1 cup prediced onions
3 cups sweet apple slices
1 tablespoon chili powder
1 (32-oz) box chicken stock
1/4 cup cilantro
1/4 cup heavy cream
1/2 teaspoon kosher salt
Dash of chipotle powder (optional)


  1. Add to large stockpot: calabaza, onions, apples, chili powder, and stock; bring to a boil. Reduce heat to low; cover and simmer 40–45 minutes or until calabaza is tender.
  2. Transfer calabaza soup to food processor bowl (or blender). Add cilantro, and heavy cream; process until smooth. Season with salt and chipotle powder (if desired). Serve.
