Ingredients

2 (16-oz) bags shredded collard greens
48 oz reduced-sodium chicken broth
1 (6–8-oz) smoked pork hock (or neck)
2 tablespoons apple cider vinegar
1 tablespoon kosher salt
1/2 teaspoon pepper
Sweet onion, chopped (optional)
Diced, cooked ham (optional)

Steps

  1. Combine all ingredients in a large stockpot with lid; cover.
  2. Bring to boil over medium. Reduce to low; simmer 25–30 minutes or until greens are tender. Discard ham hock before serving.

Other Preparation Methods

  • Sauté: Chop 6 cups collard greens. Preheat large sauté pan on medium-high 2–3 minutes. Place 1 tablespoon olive oil in pan; add collards, 1/2 cup cooked ham pieces, 1/2 teaspoon kosher salt, and 1/2 teaspoon pepper. Cook collards 15–20 minutes or until wilted and tender.
