Ingredients

For the slaw
1/2 head red cabbage (1/2 lb)
1/2 head green cabbage (1/2 lb)
1 medium radicchio
2 large carrots
4 green onions, thinly sliced
1 small jalapeño pepper, thinly sliced
1/2 cup fresh cilantro, coarsely chopped

For the vinaigrette
6 limes, for juice
1 teaspoon ground cumin
1 tablespoon agave nectar
1/4 cup olive oil
1 teaspoon kosher salt
1/2 teaspoon pepper

Steps

  1. Prepare slaw. Slice red cabbage, green cabbage, and radicchio thinly (about 2 cups each). Peel and shave carrots into ribbons (1 1/2 cups). Slice onions and jalapeño thinly. Chop cilantro. Combine all slaw ingredients in a large bowl; mix until blended.
  2. Prepare vinaigrette. Juice limes (3/4 cup) and combine in small bowl with remaining ingredients; whisk until blended.
  3. Pour vinaigrette over cabbage mixture; toss to coat. Serve.
Note: Try slaw served over your favorite shredded barbecue pork sandwich or fish taco.
