Ingredients

1 cup frozen green peas, thawed
2 1/2 cups fresh cauliflower florets (10 oz)
1/2 oz fresh basil leaves, coarsely chopped
1/2 cup roasted cashews, coarsely chopped
1/4 cup plain nonfat Greek yogurt (or mayonnaise)
1/4 cup Asian salad dressing (ginger or sesame)
1/3 cup presliced green onions
1/4 teaspoon kosher salt

Steps

  1. Thaw peas in colander under cool running water. Cut cauliflower into 1/2-inch pieces; chop basil and cashews. Combine yogurt and dressing in salad bowl.
  2. Add remaining ingredients to dressing; toss to coat. Let stand 10 minutes for flavors to blend. Serve.
