1 cup frozen whipped topping, thawed
8 oz mascarpone cheese (or cream cheese)
4 (3.25-oz) cups prepared chocolate pudding
1 (6-oz) package prepared shortbread (or chocolate) piecrust
1/2 cup seedless raspberry jam
12 oz fresh raspberries


  • Thaw whipped topping.


  1. Beat cheese with electric mixer until smooth. Gently stir (fold) in pudding and whipped topping. Spread mixture evenly in bottom of piecrust.
  2. Whisk jam until smooth, then gently stir (fold) in raspberries until combined. Top chocolate pie with raspberry mixture; chill 1 hour or until set. Serve.
