1 large yellow onion, coarsely chopped
2 medium red (or green) bell peppers, coarsely chopped
1/2 bunch fresh cilantro, coarsely chopped and divided
2 large sweet potatoes
1 (12.95-oz) package vegan chipotle flavored "sausage" links, sliced
2 tablespoons water, divided
1 tablespoon + 2 teaspoons canola oil
1 1/4 cups egg substitute (or vegan eggs)
1/2 cup presliced green onions, divided
2 tablespoons chipotle vegan mayonnaise, divided
1 cup fresh prediced tomatoes
- Chop onion (1 cup), bell peppers (2 cups), and cilantro (1/2 cup). Peel potatoes (if desired) and cut into 1-inch cubes (3 cups). Slice links.
- Place 1 tablespoon water and potatoes in microwave-safe bowl; cover and microwave on HIGH for 7 minutes or until tender when pierced with a fork; drain. Preheat large sauté pan on medium-high 2–3 minutes. Pour oil in pan; add yellow onion and peppers and cook 6–7 minutes, stirring occasionally, or until lightly browned. Add potatoes; cook 4 minutes, stirring occasionally.
- Meanwhile, cook eggs in a separate pan following package instructions.
- Add links and 1/4 cup each green onions and cilantro to potato mixture; cook 2–3 minutes, stirring occasionally, or until potatoes are tender and sausage is hot. Combine mayonnaise with remaining 1 tablespoon water. Build bowls by dividing potato mixture evenly among serving bowls; top with even amount eggs and drizzle with mayonnaise. Sprinkle with remaining 1/4 cup each cilantro and green onions, then tomatoes; serve.
