Cheddar Blini with Smoked Salmon

3/4 cup buckwheat flour baking mix
2 teaspoons dry mustard powder
2/3 cup whole milk
2 tablespoons chives, finely chopped and divided
1 cup Deli Imported Aged Cheddar Cheese, shredded
1/2 teaspoon kosher salt
2 large egg whites
Cooking spray
1/4 cup crème fraiche (or sour cream)
4 oz smoked salmon, finely diced


  1. Combine flour and dry mustard; whisk in milk until smooth. Stir in 1 tablespoon chives, cheese, and salt. Beat egg whites until firm peaks form; fold egg whites into cheese batter.
  2. Coat large, nonstick sauté pan with spray; heat on medium 2–3 minutes. Spoon tablespoon-size mounds of batter, in batches, into pan (leaving space between); cook 1–2 minutes or until bubbles form around edges. Flip and cook 30 seconds, then remove.
  3. Stir remaining chives into crème fraiche. Top each blini with salmon and chive crème fraiche.

Other Preparation Methods

  • Appetizer: Slice cheese, then place on a whole wheat cracker. Top with apple butter and chopped sage.
  • Side: Shred 1 cup cheese and stir into favorite stuffing/dressing mixture, then prepare as directed.
