6 oz pineapple juice
1/2 cup vegetable oil
2 tablespoons soy sauce
1/2 cup packed brown sugar
1 tablespoon ground thyme
2 teaspoons allspice
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1/2 teaspoon nutmeg
7 cloves fresh garlic
1 habanero pepper
1 bunch green onions
2 tablespoons fresh ginger
1 whole cut-up chicken (about 3–4 lb)


  1. Place all ingredients (except chicken) in food processor bowl (or blender); process until marinade forms. Coat chicken with marinade; cover and chill overnight.
  2. Preheat grill on medium-high. Grill chicken, turning occasionally, until 165°F. Serve.
