Brussels Sprouts, Cranberry, and Quinoa Slaw

1 cup quinoa
2 cups water
1 lb fresh Brussels sprouts
1 cup dried sweetened cranberries
2/3 cup chopped pecans
1 orange, for juice
1/4 cup olive oil
2 tablespoons apple cider vinegar
1/4 teaspoon kosher salt
1/4 teaspoon pepper


  1. Prepare quinoa following package instructions.
  2. Remove ends from sprouts, cut in half, and slice thinly. Spread quinoa on a baking sheet to cool.
  3. Combine in large serving bowl: quinoa, sprouts, cranberries, and pecans until blended.
  4. Squeeze orange for juice (1/4 cup). Whisk juice, oil, vinegar, salt, and pepper until blended. Pour dressing over quinoa mixture; toss to coat. Serve.
