Ingredients

1 1/4 cup water, divided
1 (3-oz) package cherry (or cranberry) gelatin
4 oz lemon-lime soda 
12 fresh lemons

Steps

  1. Bring 1 cup water to a boil in small saucepot on high. Add gelatin to boiling water; whisk until dissolved. Add soda and remaining 1/4 cup water to gelatin; stir.
  2. Halve lemons lengthwise; scoop out lemon flesh and reserve empty peels. Squeeze lemon flesh for juice (about 2 tablespoons); stir juice into gelatin mixture (discard remaining fruit).
  3. Place lemon peels in muffin pan (or 13- x 9-inch baking dish). Fill each peel with gelatin mixture, then chill 2–4 hours or until set and firm. Cut lemon peels into wedges. Serve.
