Beer Cheese Soup

Beer Cheese Soup

1 lb Publix Deli Imported Aged Cheddar Cheese, shredded
6 tablespoons unsalted butter
8 oz trinity mix (fresh diced onions, bell peppers, celery)
2 teaspoons seafood (or Creole) seasoning
6 tablespoons all-purpose flour
24 oz lager beer
1 quart half-and-half (or whole milk)


  1. Shred cheese. Preheat large stockpot on medium 2–3 minutes. Add butter to melt, then add trinity mix and seasoning. Cook 3–4 minutes, stirring occasionally, or until tender.
  2. Sprinkle flour over mix, stirring until absorbed. Add beer and bring to a simmer, whisking occasionally.
  3. Reduce heat to low; add half-and-half, then simmer 10 minutes, stirring occasionally. Add cheese; whisk until melted.

Other Preparation Methods

  • Appetizer: Slice and serve with other Deli gourmet cheeses, salami, and pepperoni.
  • Garnish: Shred cheddar and use to top mashed or baked potatoes.
