Beer Cheese Sauce

3 tablespoons unsalted butter
1/4 cup flour
12 oz lager beer
1 cup half-and-half
1/2 teaspoon ground red pepper
1/2 teaspoon kosher salt
1/2 teaspoon ground white pepper
8 oz sharp cheddar cheese, shredded


  1. Melt butter in medium saucepot over medium. Sprinkle flour over butter; cook and stir 1 minute. Whisk in beer; reduce heat to medium-low and stir in half-and-half, red pepper, salt, and white pepper. Simmer 10 minutes, stirring occasionally.
  2. Whisk cheese into beer mixture until melted and smooth. Serve warm.
