Banana-Nut Muffin Tops

Cooking spray
8 pitted dates, coarsely chopped and divided
2 large bananas, coarsely chopped
1/4 cup unsweetened shredded coconut
1 scoop vanilla protein powder
1/2 teaspoon kosher salt
1/2 cup old fashioned oats, divided


  1. Preheat oven to 350°F. Coat baking sheet with spray; chop dates and bananas.
  2. Place in food processor bowl: bananas, coconut, protein powder, salt, 1/4 cup oats, and one-half of dates. Process until combined and smooth. Then pulse in remaining 1/4 cup oats and dates until combined.
  3. Scoop (or spoon) dough into 3 tablespoon piles onto baking sheet. Bake 8–12 minutes or until centers are set and edges are slightly golden. Let stand to cool on pan 3 minutes before removing. Serve. (Makes about 12 cookies.)
