Banana Fritters with Cinnamon-Sugar

3 ripe bananas
1/4 cup all-purpose flour
2 tablespoons dark brown sugar
1 teaspoon lime juice
1 large egg
1/2 teaspoon kosher salt
1 teaspoon rum extract
1 tablespoon ground cinnamon
1 tablespoon granulated sugar
1/4 cup vegetable oil


  1. Place in medium bowl: bananas (peeled), flour, brown sugar, lime juice, egg, salt, and rum extract; mash until smooth and combined. Combine cinnamon and sugar in second bowl.
  2. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Pour oil to pan, then scoop dough in rounded tablespoonfuls into pan; cook 2 minutes on each side or until golden brown. Toss fritters in cinnamon sugar. Serve.
