1 (12-inch) prepared, packaged pizza crust
1 tablespoon olive oil
2 cups shredded mozzarella cheese (8 ounces)
1⁄4 cup grated Parmesan cheese
4 slices cooked bacon, crumbled
4 eggs

1⁄4 cup fresh basil leaves, chopped
1 shallot, thinly sliced
1⁄4 teaspoon paprika
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 1⁄2 cups arugula
2 tablespoons balsamic vinaigrette


  1. Preheat oven to 375°F. Place pizza crust on a baking sheet and lightly brush the crust with olive oil. Sprinkle with mozzarella cheese and Parmesan cheese. Sprinkle with bacon.

  2. Crack eggs into a small bowl. Pour each egg onto top of pizza then sprinkle with basil and shallot. Top with the paprika, salt, and ground pepper.
  3. Bake 20–22 minutes, or until eggs are set and cheese is melted and golden brown.
  4. Combine arugula and balsamic vinaigrette in a small bowl. Top warm pizza with arugula salad then into wedges to serve.
