1 medium red bell pepper, thinly sliced
1 medium orange bell pepper, thinly sliced
1 medium yellow bell pepper, thinly sliced
1/4 head napa cabbage, shredded
1 cup fresh spinach, finely chopped
1/2 cup shelled edamame
1/2 cup Asian ginger dressing
1 tablespoon toasted sesame seeds (optional)


  1. Cut peppers (1 cup each), and shred cabbage (2 1/2 cups) and spinach. Combine cabbage, peppers, spinach, and edamame; toss to combine.
  2. Drizzle dressing over top of vegetables; toss well. Cover and chill 1 hour before serving (If desired). Sprinkle with toasted sesame seeds. Serve.
