1 small Gala apple, finely chopped
1 cup whole wheat flour (or all-purpose baking mix)
1/2 cup egg substitute
1 (4-oz) cup cinnamon applesauce
1 (5.3-oz) container apple cinnamon Greek yogurt
1/2 cup unsweetened almond milk
1 teaspoon ginger spice paste
4 tablespoons pure maple syrup (optional)


  1. Peel (if desired) apple and chop into small cubes (8 tablespoons). Whisk flour, egg, apple sauce, yogurt, milk, and ginger until just combined. Divide batter between 4 (12-oz) ceramic coffee mugs and top with 2 tablespoons apple pieces.
  2. Microwave mugs, individually, on HIGH for 1–1 1/2 minutes or until cake pulls slightly away from sides of mug (microwave ovens may vary). Let stand to cool 1 minute before serving. Drizzle each with 1 tablespoon maple syrup; serve. Caution mugs will be hot. Touch mug only by handle.

Other Preparation Methods

  • Baking: Preheat oven to 350°F. Coat 24 cup mini muffin pan with spray. Fill each cup 3/4 full; top with apples. Bake 8–10 minutes or until set. Let stand 10 minutes and drizzle with maple syrup before serving.
