Ingredients

4 oz uncured turkey bacon
1 large Gala apple, cubed
1/2 cup light agave nectar
2 teaspoons apple pie spice (or ground cinnamon), divided
2/3 cup old-fashioned oats
1/2 cup unsweetened applesauce
1 (5.3-oz) container vanilla cinnamon Greek yogurt (about 2/3 cup)
1/2 cup egg whites (or egg substitute)
2 teaspoons baking powder
Cooking spray

Steps

  1. Cook bacon in oven following package instructions (keep warm until ready to serve). Peel apple (if desired), then remove core and cut flesh into small cubes. Place in small saucepan: apples, agave nectar, and 1 teaspoon apple pie spice; simmer on low for 3–4 minutes, stirring occasionally, or until apples are crisp-tender. Set sauce aside.
  2. Combine oats, applesauce, yogurt, eggs, baking powder, and remaining 1 teaspoon apple pie spice in blender (or food processor bowl); process until thoroughly blended into a batter. Preheat large, nonstick sauté pan on medium 2–3 minutes. remove pan from heat; coat with spray. Scoop 1/3 cup batter for each pancake into pan, leaving 1 inch between pancakes; cook 2–3 minutes on each side, or until pancake has browned (repeat with remaining batter). Top pancakes with sauce and serve with bacon.
