Southwest Breakfast Bowl

4 oz lean ground turkey
Cooking spray
1 teaspoon salt-free southwest seasoning, divided
1/2 cup egg substitute
1/2 Hass avocado
1/4 cup reduced-sodium black beans, drained and rinsed
1 cup precooked quinoa and brown rice medley
2 teaspoons lightly dried (or fresh) cilantro
1/3 cup corn kernels
1/4 cup prediced tri pepper mix (green, yellow, and red bell peppers)
1/4 cup refrigerated mild salsa


  1. Preheat large sauté pan on medium-high 2–3 minutes. Coat turkey with spray and 1/2 teaspoon seasoning; place in pan and cook 3–4 minutes until no pink remains. Remove turkey from pan; set aside to cool.
  2. Reduce heat to medium. Place egg and remaining 1/2 teaspoon seasoning in pan; cook 2–3 minutes or until egg is cooked and fluffy. Peel, pit, and slice 1/2 avocado. Drain and rinse beans.
  3. Place beans and rice medley in microwave-safe bowl; cover and microwave on HIGH for 90 seconds or until hot. Assemble bowl by placing rice in center of serving bowls; top with other ingredients around rice in piles with salsa in center on top. Serve.
