1 cup fresh cilantro, chopped and divided
1 lb ground pork
2 teaspoons smoked paprika
2 teaspoons garlic spice paste
1 cup salsa verde, divided
1/2 cup mayonnaise
1 (16-oz) bag tri-colored coleslaw mix
Cooking spray
12 dinner rolls, sliced for buns
1 cup potato (or plantain) chips


  1. Preheat grill (or grill pan). Chop cilantro (1 cup). Combine pork, 1/2 cup cilantro, paprika, garlic paste, and 1/2 cup salsa verde until blended; shape into 12 patties (wash hands).
  2. Combine remaining 1/2 cup each salsa verde and cilantro with mayonnaise; add slaw, then toss until well coated. Set slaw aside.
  3. Coat patties with spray; grill 3–4 minutes on each side and until 160°F. Place patties on bottom buns, then top evenly with slaw and potato chips. Serve.
