Ingredients

3 tablespoons brown sugar, divided
1/4 cup lime juice
1/4 teaspoon kosher salt
8 oz prediced red onions (1 1/2 cups)
1/4 cup diced pickled jalapeños, drained
1 tablespoon chunky garlic paste
1/2 cup mayonnaise
1 (1.25-oz) packet taco seasoning
1 lb fresh chicken tenderloins
1 Hass avocado
4 hoagie rolls
1 cup shredded Mexican-blend cheese

Steps

  1. Preheat oven to 400°F. Stir 1 tablespoon brown sugar, lime juice, and salt into onions; stir until blended, then let stand. Combine jalapeños, garlic paste, and mayonnaise; whisk to blend, then set aside.
  2. Combine taco seasoning and remaining 2 tablespoons brown sugar in a shallow dish. Coat chicken with seasoning, then place on baking sheet. Bake 8–10 minutes and until 165°F.
  3. Peel, pit, and slice avocado. Spread mayo mixture inside rolls, then place 2 tenders in each roll and top with 1/4 cup cheese. Place sandwiches on baking sheet; bake 3–4 minutes or until cheese is melted. Top each with even amounts avocado and pickled onions; serve.
